
Cauli-tots
These are AH-mazing. Crispy bottomed bites of cauli-yum. (Before you ask, yes, they do taste like cauliflower). These will be Family Faves!
Ingredients
- 12 oz riced cauliflower (defrosted if using frozen. Can use fresh as well)
- 1 -2 oz minced onion
- 1/2 tsp avocado oil
- 2 T Parm, grated
- 1 oz Ground pork rinds/pork panko
- 3 soft cooked slices of bacon, minced – you want the cook on these cooked, but not crispy – also pat excess oil off strips before mincing for best results.
- 2.5 oz Cheese of your choice, shredded
- 1 egg, beaten
- 1/4 tsp salt,
- 1/8 tsp onion powder,
- 1/8 tsp garlic powder. (feel free to add more to your liking!)
Directions
Heat oil, cook onion 1-2 mins. Add cauliflower. Stirring regularly, don’t let anything burn!
Cook 5-6 mins. Will be lightly cooked, not soft.
Remove from heat and cool to room temp.
In a bowl, combine all remaining ingredients, add cauliflower and stir.
Line a cookie sheet with parchment (REQUIRED or they will stick) and form rounds with cookie scoop or spoon.
Press the mix into that scoop to make a compacted firm Tot. You should get about 24.
With clean, damp fingers, clean up the surface of the tots if needed.
Bake 450 for 16-20 mins.
Let cool completely before moving to a plate.
Serve with Keto Ketchup!
*You can make these without the bacon, if doing so, up the salt another ¼ tsp. I don’t recommend without the pork rinds. And they won’t work at all without the cheese!
